Tricky pudding

Liked the idea of tricking your children into eating healthy? Me too. It’s why I do it all the time. I don’t lie to them about what they’re eating, but I do leave out pieces of the title of the dish they’re scarfing down. For instance; the last “secret” healthy snack I made was vanilla chia seed pudding. What I told them they were having was vanilla pudding. Had I mentioned the chia seeds, my oldest would have told me “I can’t eat that. It has seeds in it” and he would never touch it. So I picked my battle and I’d rather my kids eat healthy than argue with them on the importance of eating well, all because of what I tell them they are eating.

Vanilla Chia Seed Pudding is awesome. It’s not as thick as traditional pudding, but it’s a million billion times healthier. Chia seeds alone are rich in omega 3 fatty acids, fiber, antioxidants, protein, calcium, phosphorus, magnesium, potassium, iron, zinc, and copper. They literally have 6 times more calcium than milk.

Just google or search on Pinterest, chia seeds. What I mentioned above doesn’t come close to explain just how nutritious these seeds are.
Vanilla Chia Seed Pudding Recipe

13 oz vanilla almond milk

1/4 cup chia seeds

1 tbsp honey

1 tsp vanilla flavor (optional)

This is so easy. Which makes it a perfect snack to make for anyone with a chronic illness that can’t stand in the kitchen for too long cooking and well- it’s gonna charge that immune system! #2Birds1Stone  It’s also great for busy moms that want to provide a healthy snack for themselves and kiddos but don’t have the time to cook.

First, measure out 13 oz of almond milk into a container (I used a mason jar – the pic above). Second, add in the honey and the chia seeds (and vanilla if you’re using it. I did and thought it was just right). Third, put the lid on and give it a good shake. Place in the fridge, leave in the fridge for an hour, and then shake again (I gave mine one more good shake for good measure). Let refrigerate over night.

You could always add purée bananas to thicken up the pudding. Be creative with it. Why not.

And there you have it. Super awesome- mega healthy- good pudding.
