Bitches Love Crockpots

I’m withdrawaling from cymbalta and haven’t had the energy to cook let alone eat. But today for some reason I woke up at 6am and had a small amount of energy. So I grabbed some chicken and spices and threw together a meal in my crockpot.

So here’s a really easy recipe that you can throw together when you don’t have time to cook or like me- have pain from fibro & cymbalta withdrawal and just can’t get out of bed.

Chicken Chili 


I used:

1 lb chicken thighs

1 can black beans (rinsed)

1 can white beans (rinsed)

1 can corn (rinsed)

1 packet of chili seasoning

1 can diced tomatoes & green chilis

3 cups of water

3 chicken bouillon cubes

Handful of fresh cilantro

Add 3 cups of hot hot hot water with 3 chicken bouillon cubes. Rinse chicken and add to water. Cover and leave on high for 2 hours.

Once the chicken has cooked- remove the chicken and set aside. Stir in the chili powder. Next add beans, corn, tomatoes and chilis, and cilantro. Stir. Mmm. It smells so good.

Next- tear or shred the chicken into pieces and put it in the crock pot. Stir. Again.

Cook on low for 2-4 hours and serve. We like to it top off sour cream and cheese. And there’s dinner. Probably even some easy to reheat leftovers.
